lberto Peralta de Legarreta. Doctor in History and Ethnohistory in the Postgraduate course of the same name at ENAH, with the support of the National Council for Science and Technology (CONACYT). Research Professor at the Faculty of Tourism of the Universidad Anáhuac México North Campus, where I teach various subjects related to gastronomic history and culture. I currently direct the project-community on Facebook Gastronomic Culture of Mexico, where I document the history of uses and customs in Mexican kitchens and tables, with more than 30 thousand followers. I am the author of Gastronomic Culture in Pre-Hispanic Mesoamerica (Siglo XXI Editores, 2018), El Chilangonario (Algarabía, 2015) and Chile para todos (Algarabía, 2016).
